Hearty Health Salad recipe in Cary
If you are looking for a flavorful, healthy meal, Hearty health salad is for you! This savory salad packs a powerful punch of vegetables and protein to fill you up and keep you satisfied. We have made this salad many, many times and it continues to be one of our favorites. With the chickpeas, hardboiled eggs, avocado, and bacon, it’s hearty enough to stand alone as a lunch or even dinner.
Salad:
- Mixed greens
- Romaine hearts
- 2 carrots
- 4 hardboiled eggs
- 1 avocado
- 1 cup grape tomatoes
- 1 cup chickpeas
- 1 bell pepper
- bacon to taste
Lemon vinaigrette
- 1 Tbsp dijon mustard
- 1/4 cup lemon juice
- 1 1/2 tsp salt
- 1/2 cup olive oil
- 1 clove garlic, chopped finely
Toss mixed greens and chopped romaine hearts in a 50/50 mix. Add toppings and dressing and enjoy!
When we make this salad, we don’t really measure–we just toss ingredients together, but the list above should give you a good estimate to start with. You can also swap in or out veggies of your choice–watermelon radishes make a particular pretty addition!
